What a good read. Thank you. Now can we have an entire piece devoted in turn to cassoulet, Toulouse sausages, bouillebaisse... and on and on and on!

So which would you like first? - cassoulet, bouillabaisse, French cheeses, truffles.

It's nice to have you and your expertise here at Suite101. I vote for French cheese, next, please. I was recently at a "tasting bar", which offered a selection of luscious cheeses and cured meats. I recognised only two out of a dozen cheeses listed on the tasting board. One was described to me by the waiter as "ashy". He said it with enough authority and gusto to convince me to try it. I'm not sure I tasted ash, but I'd love to learn more about it!

Hi Terry:
Welcome to Suite 101. Now I know who I will contact when I go to France. Your articles are great. I just read Julia Child's My Life in France and highlighted all the restaurants she favored. I also would like to read more about French cheese. When I'm still hunting down places where I can purchase Wensleydale cheese here in Cambridge Mass I can add your French cheeses to my list.
